Blood Orange & Honey Mimosa with Freixenet

This tart mimosa recipe comes from an afternoon spent with my mother. She has always been a blood orange fan, talking to all the farmer’s markets to see who has them; in season and sometimes out of season. If normal sweet mimosas can be too much for you, this is a tart alternative. We have also used a grapefruit and orange juice mix if blood oranges are not available.
